Apple Cinnamon Baked Oatmeal
Jan 18, 2024If you've been following me for a while you'll know that I'm a big fan of baked oatmeal for breakfast. I have a base recipe that I use frequently and love to experiment with creating different kinds depending on the season.
This week I whipped up a tasty apple cinnamon version and obviously had to share it with you ;)
Why do I love baked oatmeal? Well, there are many reasons.
Here's a few:
- It's easy to prep ahead!
- You can grab it and go
- If you're a texture person, this is much nicer than regular oatmeal
- It's insanely easy to make (just add, mix, and throw it in the oven!)

(makes 6 servings/squares)
Ingredients:
- 1 cup quick oats
- 1 cup rolled oats
- 1 cup finely chopped or shredded apple* see notes
- 1 cup egg whites
- 1 egg
- ¾ cup milk (any type will do!)
- ¼ cup melted butter or coconut oil
- ¼ cup maple syrup
- 2 tsp cinnamon
- 1 tsp vanilla extract
- ½ tsp salt
Directions:
- Preheat oven to 350F. Line a 13x9 pan with parchment paper or oil.
- Add all ingredients to a large bowl and mix until combined.
- Pour into the pan and bake for 30-35 minutes or until the edges are golden brown.
- Cut into 6 equal-sized squares.
- Eat on its own or top with some high-protein yogurt or almond butter.
- Enjoy!
Notes:
- For the apple: The fastest way is to chop it into large chunks to remove the core and then add slices to a food processor to finely dice.
- I recommend soaking up some of the moisture from the apple with a paper towel before adding it to the bowl so that your baked oatmeal stays into more of a “bar” format when eating (less crumbly!).
