Avocado Chicken Salad

I'm going back to an original fav this week for lunches. I used to have this one all the time but it's been ages! This avocado chicken salad is the perfect cold lunch option that offers high protein and lots of crunchy and tangy flavour. I will often eat it on it's own or on top of rice cakes but many people like to make sandwiches or wraps with it too. Get creative!

Avocado Chicken Salad 
(makes 4 servings)
Ingredients:
  • 2 cups shredded or chopped chicken (approx 350g)
  • ¾ cup plain greek yogurt
  • 1 avocado
  • 1 cup grapes
  • ⅓ cup walnuts or sunflower seeds (or a mix of both!)
  • 1 cup chopped celery
  • ½ tsp salt
  • ½ tsp pepper
  • ½  tsp garlic powder
  • 1 lime*
For serving (optional): 
  • Rice cakes, toast, wrap, or lettuce
Directions:
  1. Chop all ingredients into small pieces.
  2. In a large bowl, add greek yogurt, avocado, and seasonings to a bowl and mix until combined.
  3. Add all chopped ingredients to the bowl and mix until combined.
  4. If not eating right away, squeeze a lime into the mixture to help preserve the avocado longer. 

Note: If you are meal prepping this for a few days at a time, I’d suggest leaving the avocado out until the time you are going to eat it so that it’s nice and fresh (and green, haha).
