Cherry & Blueberry Yogurt Parfait
Aug 15, 2024I've been getting a lot of requests lately for high protein breakfast options that aren't egg based. I realized this was not surprising after sharing an Instagram post & poll yesterday about eggs sometimes giving people the ick haha. In case you missed it, here's the post and poll results:
So, naturally I decided to do an EGG FREE breakfast recipe that is well balanced with protein, fibre, and antioxidant rich fruit too. This is a simple, yet nutrient-packed breakfast (or snack!) that is definitely worth adding into your rotation!
- 1 cup plain greek yogurt
- ½ cup oat milk (or other milk of choice!)
- 1 tbsp ground flax seed
- 1 tbsp chia seeds
- ½ cup cherries (pitted, halved)
- ½ cup blueberries
- 1 ½ tsp honey (optional)
- 2 tbsp pumpkin seeds
- ¼ tsp cinnamon
- In a bowl, mix the Greek yogurt, oat milk, flax, and chia seeds together until smooth.
- Layer the yogurt mixture, cherries, and blueberries into individual serving glasses, bowls, or jars.
- If desired, drizzle the honey over the fruit layers. Repeat the layering process until all ingredients are used.
- Top the parfait with pumpkin seeds and cinnamon. Serve immediately or refrigerate until ready to eat.
- Enjoy!
- Refrigerate in an airtight container for up to two days.
- One serving is approximately 1 1/2 cups.
- To make dairy free use plant-based yogurt instead (and consider adding protein powder for higher protein).
