Choco Raspberry Yogurt Bites

Omggggg, these are SO delicious and feel like the most decadent little summer treat! You could get creative and make these with so many different kinds of fruit too.

They are well balanced with the protein rich greek yogurt, fibre from the berries, and fats from the dark chocolate, making them a great sweet snack for those with blood sugar or hormone concerns too!

Dark Chocolate Raspberry Yogurt Bites
(makes 6 bites)
 
Ingredients
  • 1 cup high protein greek yogurt*
  • ½ cup fresh raspberries
  • ¼ dark chocolate chips
  • 1 tbsp coconut oil 
Directions:
  1. Stir the yogurt and raspberries together in a bowl until well mixed and the yogurt has started to turn pink.
  2. Line a baking sheet with parchment paper. Spoon out 6 equal sized bites evenly spaced apart (as they will melt down/spread a bit).
  3. Place in the freezer until completely frozen.
  4. Melt chocolate chips and coconut in the microwave for 30 seconds. Remove and gently stir then add back in for another 30 seconds. Mix again and if still not melted add for another 15-30s or until melted.
  5. Remove bites from the freezer, keeping them on parchment and then evenly pour chocolate over the bites. The chocolate should harden quite quickly and you could either serve immediately or place back in the freezer and enjoy as you’d like! 
Notes:
  • I used Siggis vanilla yogurt but a plain or honey would work as well.
  • If you’d like to make them sweeter add a drizzle of honey to the yogurt mix.
  • These can be a little messy so definitely make sure they are completely frozen before pouring the chocolate over top!
