Egg White Oatmeal

I'm officially back from my trip (and mostly recovered from jet lag)! I had a lovely time and I'm also feeling excited to get back into some routines such as cooking my own meals, lifting weights, and saving money. 

 

Already since being back I've had a few clients ask for more high protein breakfast ideas so I wanted to share a really easy spin on oatmeal that adds a nice boost of protein: egg white oatmeal. 

 

It might sound a bit weird, but when cooked properly (waiting to add the egg whites until the end and stirring well), it's really, really good! Or, if this doesn't feel like your vibe scroll to the bottom for a few ways to add more protein to your regular morning oatmeal, sans egg whites.

Egg White Oatmeal 
(makes 2 servings)
 
Ingredients:
  • 1 ½ cups milk (any kind)
  • 1 cup old fashioned oats
  • 1/2 cup liquid egg whites
  • 1 tbsp honey
  • 1 tsp cinnamon
 
Optional:
Top with your favourite fruit, nut butter, or nuts! 
 
Directions:
  1. Heat 1 1/2 cups of the milk in a medium pot.
  2. Once milk is boiling, add oats and cook on medium heat for 7-10 mins or until most liquid is absorbed.
  3. Add egg whites, honey and cinnamon.
  4. Stir constantly for 2-3 minutes over medium heat to cook egg whites.
  5. Add your favourite toppings and serve!
 
Other ways to increase protein in your oatmeal: 
  • Add protein powder
  • Mix in powdered peanut butter (higher protein concentration than nut butter)
  • Top with hemp seed hearts and/or chia seeds (minimal protein addition, but it will also add some healthy fats and fibre too)
