One Pan Stir Fry

The long weekend is coming up and for many it's going to be busy doing various summery things and likely will result in zerrooooo motivation to do some planning and prep for the week after.

So, keep it simple and try out this one pan stir fry that I made the other day! It's very simple but still full of flavour and is great as is or when served with rice.

One Pan Beef, Broccoli, and Yam
(makes 4 servings)
 
Ingredients:
  • 2 Tbsp sesame oil
  • 2 sweet potato (medium, cubed)
  • 2 red bell pepper (medium, chopped)
  • 4 cloves garlic, diced or minced
  • 680 grams extra lean ground beef (or ground chicken)
  • sea salt & black pepper (to taste)
  • 4 cups broccoli (cut into small florets)
  • 8 stalks green onion (chopped)
  • 1/4 cup tamari
  • 2 Tbsp sesame seeds
 
Optional for serving:
  • Rice or other grain such as quinoa 
 
Directions:
  1. Heat the oil in a large pan over medium-high heat. Add the potatoes to the pan and cook for four to five minutes until starting to soften.
  2. Add the bell pepper and garlic to the pan and sauté for two minutes. Add the beef and cook for three to four minutes, or until the beef is cooked through, breaking it up as it cooks. Season with salt and pepper.
  3. Stir in the broccoli, green onions, tamari, and sesame seeds. Cook for three to five minutes or until the broccoli is tender, stirring as needed.
  4. Divide evenly between bowls and enjoy!
