Peachy Overnight Oats

I am feeling lazy AF when it comes to meal prep these days. Between summer, selling our house, and everything in between, meal prep is NOT something I want to add to my list right now. Buuuuut, I know that when I do it I feel better and stress way less about what to eat and when.

SO, I'm still prepping, but I'm keeping things ASAP (as simple as possible, lol), and overnight oats are an awesome, easy prep breakfast or snack option.

Plus, it's peach season (yay, my fav!) so I couldn't not make them peachy!

Enjoy and happy easy peachy meal prep!

Peachy Overnight Oats
(makes 2 servings)
 
Ingredients:
1 cup rolled oats
3 tbsp chia seeds
¾ - 1 cup milk of choice
¼ cup protein powder (approx 1 scoop)
1 tbsp maple syrup
1 tsp vanilla extract
1 tsp cinnamon 
 
Topping:
  • Diced fresh peaches to your liking! Or you can layer them into the overnight oats for a parfait kind of vibe.
  • Optional: Granola for a little crunch
 
Directions:
  1. Mix the ingredients for the overnight oats into a large glass measuring bowl (for easy pouring) and mix well.
  2. Pour into two sealable jars (I typically use small / sized mason jars)
  3. Store in fridge overnight and then top with your peaches and granola.
  4. Enjoy for an easy, quick prep, summery breakfast!
 
Notes: 
  • These typically will store well in the fridge for up to 3 days so I usually prep at least a couple at a time to save time in the morning. 
  • They are great as breakfast, snack, or pre/post workout option!
