Shrimp Ceviche
Apr 04, 2024I'm really feeling the sunny vibes, so I'm going to make this recipe this weekend. Of course, I had to share it with you ;)
Ceviche is a lovely, fresh, and vibrant dish, and a great way to “eat the rainbow” while also getting a healthy dose of protein.
Fun Fact: The protein (shrimp & fish) that is typically added to a ceviche is often “cooked” in lime juice, which happens because of the acidic nature of the lime juice, in a process called denaturation. *If you do decide to do this, be sure to use fresh, quality seafood and use fresh lime juice (it doesn't work well with the bottled stuff!).
My favorite way to serve it is with nacho chips, but it's also delicious on a bed of leafy greens as a salad (perhaps topped with a few nachos for extra crunch). I've also included a link to a great cilantro lime dressing recipe below.
- 1 lb. cooked shrimp
- ½ red onion
- 2 tomatoes
- 1/2 large cucumber
- 1-2 jalapenos
- 1/2 large mango
- 1 medium avocado
- 1 cup cilantro, chopped
- 3 limes, juiced
- 1/2 tsp salt
- Dice all ingredients and add to a large bowl.
- Pour in lime juice and season with salt to your preference.
