Sweet Potato Pizza Bites
Feb 29, 2024Who doesn't love pizza flavoured things!? These are my new favourite snack and they'd also make a killer appetizer for any gathering. YUM!
I've been craving some savoury snacks later and these definitely hit the spot! You could also swap the sweet potato for sliced zucchini too ;)
I followed the recipe instructions and cooked them in the oven, but I'm sure you could easily cook them in the airfryer instead! If you try it out let me know ;)
- 1-2 sweet potatoes small-medium, about 1 lb. look for a narrow/long sweet potato (yam), cut into 1/3 inch thick coins.
- 1 tbsp of olive oil
- pinch of salt and black pepper
- ¼ cup marinara sauce homemade or store-bought
- ½ cup mozzarella cheese cubed/shredded
- 1 tbsp fresh basil leaves finely chopped
- pinch red chili flakes
- Preheat oven to 400 degrees F and line a baking sheet with parchment paper.
- Cut sweet potatoes into 1/3-inch thick coins and drizzle the olive oil on top. Add a pinch of salt and black pepper, and use your fingers to coat the sweet potatoes with the oil and spices thoroughly.
- Bake the sweet potatoes for about 15 minutes, or until golden brown. Be careful not to over bake them as you don't want them too soft.
- Remove the sweet potatoes from the oven and add a spoonful of marinara sauce in the center. Sprinkle the mozzarella cheese evenly on top. Return to the oven and bake for 5 additional minutes, or until the cheese is melted.
- Remove from the oven and sprinkle the finely chopped basil leaves on top. Let the pizzas cool for about 2-5 minutes before serving.
